A Super Quick Tomato Basil Soup Recipe

Onion, celery, carrots, beets, and fresh cherry tomatoes make for a rich and flavorful base in this Hearty Tomato Basil Soup. Hearty Tomato Basil Soup

Yields 4 servings, as a meal

  • 4 slices bacon or pancetta (about 4 oz), chopped
  • 1 onion, chopped
  • 3 celery stalks, chopped
  • 3 carrots, chopped
  • 2 golden beets, chopped
  • 8 oz. fresh cherry tomatoes, halved
  • 3 garlic cloves
  • 2 T organic tomato paste
  • 2 T balsamic vinegar
  • 6 C broth or stock of choice
  • 2 bay leaves
  • Large bunch of basil, roughly chopped
  • Sea salt & ground black pepper, to taste
  • 1-2 scoops Vital Proteins Collagen Veggie Blend 


  1. Heat a large soup pot over medium heat. Add the bacon and cook until browned.
  2. Add the onion, celery, carrots, and beets to the pot. Stir well.
  3. Add a large pinch of sea salt to help soften the vegetables. Cook until softened and translucent, about 10 minutes, stirring occasionally.
  4. Add the cherry tomatoes, garlic cloves, and tomato paste. Cook to warm the tomatoes through, about 2 minutes.
  5. Add the balsamic vinegar to the pan to deglaze and scrape any browned bits from the bottom.
  6. Add the broth and and bay leaves and stir well. Bring to a simmer and cook for 30 minutes on medium low heat.
  7. Remove the soup from the heat and stir in the chopped basil. Season with sea salt and black pepper, to taste.  
  8. Add 1-2 scoops of Collagen Veggie Blend to each bowl served, as desired. Stir in and enjoy immediately.

*Note: Our Beef Gelatin will work here as well.  But you’ll want to mix it in with a half cup of cold broth before mixing into your hot cooked soup.
