Energize Your Day With This Fruit-Forward Breakfast Recipe

Trying to change up your morning meal? Look no further than these Peach Crisp Cups. This sweet, fruit-filled breakfast is jam-packed with good-for-you ingredients, while tasting like dessert in every bite. Each cup is created using a simple peach base and a minimal ingredient crumble topping. The base of each cup features ripe peach slices for flavor, coconut oil for a boost of healthy fats, almond flour for a bit of fiber and the Vital Proteins® Morning Get Up & Glow™ in Peach Mango ($30; shop now) to give this recipe a little boost.

This sweet breakfast treat is topped with the perfect crumble, and once the cups go into the oven, the crumble crisps while the base turns into an ooey-gooey  filling. Yes, we're drooling over here. Ready to dive into this new breakfast treat? Let's get started!

Peach Crisp Cups

Yields 4 Peach Crisp Cups

Filling Ingredients:

Crumble Ingredients:

  • ½ C rolled oats
  • 2 T coconut oil (melted)
  • ½ C walnuts (crushed)
  • 2 T coconut sugar
  • 2 T honey

Directions:

  1. Preheat your oven to 350°F.
  2. Prepare the filling by peeling and slicing the peaches into thick pieces.
  3. Place the peaches and melted coconut oil in a mixing bowl and combine until mixed.
  4. Add the almond flour and Morning Get Up & Glow™ in Peach Mango to the mixing bowl and stir until well combined.
  5. Spray your ramekin bowls with your favorite cooking spray and evenly pour the batter into each cup.
  6. In a separate bowl, mix the rolled oats, melted coconut oil, crushed walnuts and coconut sugar.
  7. Once the ingredients are well combined, stir in the honey, creating pieces of the crumble topping.
  8. Top each cup with the crumble topping and place them in the oven for 10 minutes.
  9. Remove the cups from the oven and spray the top of each with cooking spray.
  10. Bake the cups again for another 5 minutes to crisp the crumble.
  11. Let the cups cool & enjoy!
