On-The-Go Caesar Salad
Yields 6 servings
Roasted Chickpea Ingredients:
- 1 can chickpeas
- 2 T avocado oil
- 1 t cayenne
- 1 t garlic powder
- Bake on 350°F for 30 minutes.
- 4 C chopped romaine lettuce
- 4 C chopped kale
- ½ C dairy-free parmesan cheese
- 1 T lemon juice
- 1 C avocado mayonnaise
- 2 T lemon juice
- 2 T Worcestershire sauce
- 1 T Dijon mustard
- 1 clove garlic (minced)
- 1 scoop Vital Proteins® Marine Collagen
- Salt and pepper to taste
- Combine all salad ingredients and dressing into a glass jar.
- Add Parmesan and lemon juice to the jar.
- Top off salad with more dressing, add in the roasted chickpeas, mix & enjoy!
