On-The-Go Caesar Salad

Yields 6 servings

Roasted Chickpea Ingredients:

  • 1 can chickpeas  
  • 2 T avocado oil  
  • 1 t cayenne  
  • 1 t garlic powder  


  1. Bake on 350°F for 30 minutes.  

Salad Ingredients:

  • 4 C chopped romaine lettuce
  • 4 C chopped kale  
  • ½ C dairy-free parmesan cheese
  • 1 T lemon juice  

Salad Dressing:  

  • 1 C avocado mayonnaise   
  • 2 T lemon juice  
  • 2 T Worcestershire sauce
  • 1 T Dijon mustard  
  • 1 clove garlic (minced)  
  • 1 scoop Vital Proteins® Marine Collagen
  • Salt and pepper to taste  


  1. Combine all salad ingredients and dressing into a glass jar.
  2. Add Parmesan and lemon juice to the jar.
  3. Top off salad with more dressing, add in the roasted chickpeas, mix & enjoy!
