These Blueberry Breakfast Bars Will Make You A Morning Person

They are great not only because they are perfect to eat on the go, but these Blueberry Yogurt Bars boast ingredients like dairy-free coconut yogurt. With a bottom layer that’s made with gluten-free oats, each ooey-gooey bite of this breakfast staple is reminiscent of blueberry pie!

Blueberry Yogurt Bars

Yields 8-10 servings

Ingredients:

Directions:

  1. In a blender, add the coconut yogurt, maple syrup, frozen blueberries, vanilla extract and Vital Proteins Collagen Creamer®. Blend on high until the blueberries are blended and the mix turns purple.
  2. In a separate blender or food processor, add in the oats, raw honey, cinnamon and vanilla extract. Pulse on high or until the mixture become sticky and dense.
  3. In an 8x8 baking dish, line with parchment paper and press the oat mixture to the bottom.
  4. Distribute the oat mixture on the bottom until it forms evenly to the dish.
  5. Next, add the blueberry yogurt on top of the bottom layer, and evenly spread it out to fill the dish. Top with blueberries and extra oats as desired.
  6. Once the blueberry yogurt dish is prepared, freeze for up to 10 hours or until completely frozen.
  7. An hour before cutting into bars, remove from the freezer and transfer to the fridge. With a sharp knife, evenly cut the bars into rectangles. Serve & enjoy!
