mexican rice recipe

Mexican Rice

Yields 3 servings

Ingredients:

  • 1 C washed rice
  • 2 T cooking oil
  • ½ white onion (chopped)
  • 2 tomatoes (chopped)
  • 1 garlic clove
  • 1 pinch of salt
  • ¼ C peas and carrots (optional)
  • 1 cube of chicken bouillon
  • 1 scoop Vital Proteins® Chicken Bone Broth Collagen
  • 2 C water

Directions:

  1. Sauté the rice in hot oil in a saucepan until golden brown.
  2. While rice is cooking, blend tomatoes, onion, garlic, salt and a splash of water.
  3. Pour tomato puree into the rice using a strainer and stir.
  4. Add in remaining ingredients.
  5. Stir while bringing it to a boil, cover, reduce heat and simmer for 20 minutes. Serve & enjoy!
