Coconut Fruit Tart

Yields 1 fruit tart (about 8 servings)

Crust Ingredients:

  • 8 graham crackers
  • ½ C almond flour
  • ¼ C coconut oil
  • ⅓ C honey
  • 2 T coconut shreds

Filling Ingredients:


  • Fresh berries

Crust Directions:

  1. Blend the dry crust ingredients in a food processor.
  2. Once the ingredients form a crumb-like consistency, add the remaining ingredients, and mix until combined.
  3. Pour the mixture into your pie pan and press to cover the entire surface (including edges).
  4. Refrigerate the crust while you make the filling.

Filling Directions:

  1. To make the filling, add all filling ingredients to the food-processor and mix.
  2. Pour the fluffy mixture into the crust mold and spread to fill the surface.
  3. Slice your fruit/berries of choice and cover the entire tart.
  4. Refrigerate for one hour, then enjoy!
