Chicken Parmesan

Yields 4 servings 

Ingredients:

  • 1 lb. chicken breast 2 eggs (whisked)
  • 4 T avocado oil (divided)
  • 1¼ C almond flour
  • ¼ C arrowroot powder
  • 2 scoops Vital Proteins® Chicken Bone Broth Collagen
  • 2 t garlic powder
  • 1 t sea salt
  • 1 t pepper
  • 1 t basil
  • 2 C pasta sauce of choice
  • 2 oz. dairy-free mozzarella cheese
  • 1 T fresh parsley

Directions:

  1. Preheat oven to 375°F and heat half of the avocado oil in a skillet over medium heat.
  2. In a shallow bowl, whisk eggs together. In a separate bowl, combine the dry ingredients and mix.
  3. Dip each chicken breast in the egg mixture until fully coated and then into the dry mixture until each breast is fully coated.
  4. Put each chicken breast in the skillet and cook on each side for 3 minutes or until golden brown. 
  5. In a glass baking dish, add the other half of the avocado oil and the pasta sauce onto the bottom. Evenly spread on sauce with a spatula.
  6. Place each fried chicken breast on top of the sauce and add more sauce on top.
  7. Sprinkle chicken breasts with shredded cheese and bake in the oven for 20 minutes.
  8. Once the chicken breasts are fully cooked through, remove from oven and top with fresh parsley.
