What is the one thing you reach for when the heat kicks in? I don't know about you, but a cold, refreshing treat is just what I need. These Coconut Freezer Bars are just that!
Curious what’s in them? The ingredients include coconut cream for a creamy texture, dates for fiber and a touch of sweetness, as well as the Coconut Collagen Creamer™. Before we go any further, did we mention this recipe also calls for chocolate chips? Yes, we went there! When it comes to summer treats we don’t mess around!
While this recipe is super smooth, it also calls for a chocolatey, nutty crust. Better yet, the crust calls for 3 ingredients! (We won’t tell if you don’t!)

Yields 10 Servings
Ingredients For Crust:
1 C cashews
Ingredients For Cream:
1 can or 1¼ C refrigerated coconut cream (only the thick part will be used for this recipe)
Cut the pitted dates into quarters.
Place the cashews and dates in a bowl with 1 C of hot water. Let this sit for 10 minutes to allow both to soften.
Drain the water out with a strainer and place the cashews and dates in a good processor. Blend until smooth.
Add the cacao and continue to grind in the food processor until smooth.
Line a loaf pan or similarly shaped Tupperware with parchment paper.
Press the mixture into the loaf pan, evenly spreading it across the bottom with a spatula or your hands. Once complete, pop it in the freezer.
While the crust is in the freezer, begin to make the creamy filling.
In a mixing bowl, mix the coconut cream (only using the thick part of the can) with the honey until smooth.
Mixing in between ingredients, add the Coconut Collagen Creamer™, coconut shreds and chocolate chips.
Remove the crust from the freezer and pour the mixture on top. Option to top with additional chocolate chips.
Remove from the freezer for 5 to 10 minutes to slightly defrost. Slice the loaf into bars and enjoy! (You may also top the sliced bars with melted chocolate for some extra sweetness!)
