Enjoy This Chipotle Lime Chicken Recipe For Dinner Tonight

If you're looking for a flavorful, fuss-free meal to add to your dinner rotation then this Chipotle Lime Chicken is exactly what you need. Luckily, this collagen recipe tastes like a summertime fiesta in every single bite! It's light, fresh, full of flavor and boosted with Vital Proteins Collagen Peptides, so it's also helping to support healthier hair, skin, nails and joints.**

The chipotle-lime marinade is so simple to put together while also packing on big flavor. Chipotle sauce, garlic, lime, salt, pepper and a drizzle of olive oil is all you need! I personally love the subtle, smoky kick of heat that the chipotle sauce adds to the chicken especially when combined with that zesty hit of lime! If you prefer a milder spice level, then feel free to substitute tomato paste in place of the chipotle and 1 teaspoon of smoked paprika instead. This is a dish not to be missed! Cook it on the grill or simply in a hot skillet. Serve it with a simple salad or load it into tacos or tortilla and fill them up with all of the trimmings. However you choose to do it, I guarantee it will fast become a family favorite!

Chipotle Lime Chicken

Yields 2 servings

Ingredients:

  • 1 lb. chicken (breast or thighs, with or without skin works fine)
  • Juice of 2 limes
  • 2 garlic cloves, crushed
  • 2 T olive oil + extra for cooking
  • 2 scoops Vital Proteins Collagen Peptides
  • 1 T adobo sauce from a can of chipotle chili peppers in adobo sauce (sub 1 T tomato paste + 1 t smoked paprika for a milder version)
  • 1 t freshly grated lime zest
  • 1/2 t salt
  • 1/2 t freshly ground black pepper

Garlic Cream Dressing Ingredients:

  • 1 C coconut yoghurt
  • 1 t garlic powder
  • 1 scoop Vital Proteins Collagen Peptides
  • 1 t freshly squeezed lemon juice
  • 1 t salt
  • 1/2 t freshly ground black pepper
  • Water to thin it out to desired consistency

Optional for serving:

  • Grain or gluten-free tortillas
  • Avocado
  • Cabbage
  • Mixed Greens
  • Diced tomatoes
  • Jalapeños
  • Cilantro
  • Hot sauce

Directions:

  1. Place chicken in to a baking dish or Ziploc plastic bag and set aside.
  2. Place lime juice, garlic, olive oil, adobo sauce, lime zest, Collagen Peptides, salt, and pepper into a small bowl or jug and stir to combine.
  3. Pour over the top of your chicken and toss to coat. Marinate in the refrigerator for 30 minutes.
  4. When you're ready to cook, fire up the grill or place a large skillet over medium-high heat and remove chicken from the marinade. (Discard any remaining juices).
  5. Cook chicken, in a single layer, for 3-5 minutes per side depending on level of thickness. Turn and cook for 2-3 minutes more.
  6. Transfer to a plate and allow to rest for 3-5 minutes before slicing and serving.
  7. If making the garlic cream dressing, simply place all dressing ingredients into a small bowl and stir to combine.
  8. Taste and adjust seasonings as needed.
  9. Add water, 1 teaspoon at a time to reach desired consistency.
  10. *Dressing will keep well refrigerated for 3-5 days.*
