Sweet Molasses Bread

Yields 8 slices

Bread Ingredients:

  • 1¾ C almond flour
  • 2 T coconut flour
  • 4 eggs
  • 1/3 C maple syrup
  • ¼ C melted coconut oil
  • 1 t vanilla extract
  • 1/3 C almond butter
  • 1/3 C water
  • 1 t baking soda
  • 1 T molasses
  • 1 T cinnamon
  • 1 t ground ginger
  • 1 t nutmeg
  • 2 scoops Vital Proteins® Vanilla Collagen Peptides
  • Pinch of sea salt

Icing Ingredients:

  • 1 can coconut cream
  • 2 T maple syrup
  • 1 t vanilla extract

Directions:

  1. Preheat oven to 350°F.
  2. Grease a standard-size bread pan with coconut oil.
  3. In a large bowl, whisk together the eggs, maple syrup, water, vanilla extract, molasses, melted coconut oil and almond butter.
  4. In another bowl, mix the almond flour, coconut flour, baking soda, ginger, nutmeg, cinnamon, cloves, collagen and salt.
  5. Mix the wet and dry ingredients until fully combined.
  6. Pour the batter into the bread pan and bake for 40-45 minutes.
  7. For the glaze, chill a can of coconut cream overnight (or place in the freezer for 45 minutes to an hour) and scrape off just the top portion of the coconut, discarding the water on the bottom. Add the maple syrup and vanilla extract and mix with electric beaters until fluffy (about 30 seconds).
  8. Once the bread has cooled completely, coat the coconut icing generously on top of the bread & enjoy!
