I wake up every morning at 6 a.m. This is way, way earlier than when I actually need to leave my house to catch my train. I am a total morning person, so I like to take my time in the morning to wake up, eat some breakfast, and most importantly, drink my coffee. I honestly look forward to drinking my coffee every morning. The perfect recipe that I have created calls for 8 oz. of black coffee, 1 scoop of Vital Proteins Coconut Collagen Creamer, 1 scoop of Vital Proteins Collagen Peptides, and ½ a cup of homemade cashew milk.

After I get ready, eat my breakfast – usually sweet potato toast – I head out the door for my morning 1.5-hour commute. I usually pop in an episode of the Almost 30 podcast and head out the door. The long walk each way is a great way for me to get my cardio in – especially because I hate working out. If I make it for a walk during lunch, I usually average at almost 5 miles per day!

When I arrive at work, I usually grab some fresh fruit and another cup of coffee – preferably an oat milk latte, made by our lovely barista, Becca! I sit down and begin my day. My work day usually consists of fielding phone calls, responding to emails, and placing wholesale orders for customers as well as educating them about the amazing products we have here.

I mainly eat grain-free, dairy-free, gluten-free, and added sugar-free meals, which normally means eating some form of meat and veggies for lunch. Wednesdays are my favorite day at VP because we always have a grain-free, gluten-free, dairy-free meal for lunch! My favorite thing so far has been the curry chicken lettuce wraps. SO GOOD!

When the work day is over, I head out for my walk back to the metro and pop in another podcast episode. When I get home, I usually cook up some cauliflower gnocchi or my favorite: Chicken sausage and brussels sprouts!

Sometimes to unwind, I’ll go to a restorative yoga class to calm my mind before getting ready for bed. It is one of my favorite things to do! I always end the night with a cup of tea and a few Vital Proteins Spirulina capsules. Then it’s time to start all over again!
