Refuel naturally with these anti-inflammatory gummies!
To all of our friends running the Boston Marathon next week, these Berry Anti-inflammies are for you! Rather than reaching for sugar-laden post-workout drinks or chews, having a batch of these gummies on hand will speed up your recovery by refueling your body naturally. Our Beef Gelatin is a significant source of glycine, which is proven to aid in muscle and connective tissue repair, meaning it can both ease soreness and aid in new muscle growth. The addition of fresh lemon juice and berries provides flavonoids that have an anti-inflammatory effect down to the cellular level. Additionally, ginger has shown in studies to be a COX-2 inhibitor, essentially behaving like a painkiller to reduce pain due to inflammation (but in a much more natural way!). And a bit of added magnesium can ease muscle soreness and stave off muscle cramps that can occur after long bouts of strenuous exercise. Did we mention, they also taste delicious?
Yields: about about 36 gummies
¼ c. fresh-squeezed lemon juice
4 tbsp. Vital Proteins Beef Gelatin
3 cups mixed fresh or thawed frozen berries
2-4 tbsp. honey (*adjust to desired sweetness)
2 tsp. grated ginger
Large pinch of sea salt
600 mg. magnesium or magnesium/potassium blend*
Add the Beef Gelatin to the lemon juice in a small bowl. Stir and set it aside for 3 minutes to let the gelatin bloom.
Add the berries, honey, ginger, and sea salt to a large blender. Blend on high until smooth. Optionally, press the liquid through a strainer to remove the seeds.
Pour the berry juice into a medium saucepan and place over medium-low heat. Add the bloomed gelatin and lemon juice and stir continuously until the gelatin is melted.
Remove the pan from the heat and stir in the magnesium, if using. Pour into silicone molds or a large glass dish. Refrigerate until solid, about 2 hours for molds or 4 hours for a large dish.
*Magnesium or a magnesium/potassium powder is typically very mild and won’t affect the overall flavor of the gummies. It makes a great addition for these as a post-workout recovery snack. Feel free to add less but any more than 600 mg can impact the flavor of the gummies.
